The Arbequina olive of great cultivation in the Mediterranean area. It is sweet and aromatic, also with a bitter touch and a certain freshness. The resulting oil is not bitter or itchy because it is soft, light, delicate, harmonious and with aromas of green fruits. Because the olive is also collected at the optimal moment of ripening, directly from the tree and with the utmost care.
"SOTARONI" extra virgin olive oil is obtained naturally. In addition, through appropriate mechanical processes that, together with the quality of the olives, ensure high-quality juice. That keeps intact the organoleptic properties of the fruit from which they come.
The same day it is collected, it is transferred in containers adapted to the mill where it is ground under the strictest quality controls. Once the oil has been obtained, it is stored in tanks at a temperature between 15º and 18º to allow conservation, while avoiding oxidation.

Between the Natural Parks of the Font Roja and the Sierra de Mariola, in a family farm of more than 140 hectares, of which 60 hectares are used for the cultivation of olive trees of the Arbequina variety and the rest for other indigenous crops in this area ( aromatic plants, cherry, walnut, almond, ...). Its situation more than 800m. above the level of evil, its proximity to it makes the Mediterranean climate and the exceptional qualities of these lands, ideal conditions for the cultivation of olives.
