Buenalba is Artequeso's brand of special cheeses, and its range is made up of both PDO La Mancha as artisan cheeses not covered by the La Mancha denomination. We can only call Manchego cheese that which is made EXCLUSIVELY with sheep's milk from the La Mancha breed, without mixed or added goat's or cow's milk. Manchego Cheese can only be made in the area covered by the Denomination of Origin, which covers part of the provinces of Albacete, Ciudad Real, Cuenca and Toledo. Gourmet product. CHARACTERISTICS: Type of pasta. Pressed, firm and with unevenly distributed eyes. 6-8 months of maturation. Bark: Marked with pleita in the cylindrical part. Flower on flat faces. This is how we control our raw material from the source. The transformation of this milk is carried out respecting the artisan tradition, with careful curing at controlled temperature and humidity.
